Krasotiri is the hard white goat cheese, produced traditionally and exclusively on Kos island. The cheese is aged in red sundried wine and gets it’s reddish skin, aroma and taste from the wine. The wine helps the cheese create the red external crust and keeps the inside hard and tasty. Krasotiri or wine cheese, is pasteurised and matures inside brine, enriched with the dregs of local wine and it acquires a crust that keeps it hard even in its packing. This method results in feeling immediately its gentle and intense wine sense. The tradition in Kos island started at about 300 B.C. when at some point there was a lack of olive oil which was used until then for cheese maturation. Instead, they used red wine, which production is kept till our days. It is a singular product from Kos that will intrigue the cheese connoisseur and lovers. it is ideally paired with watermelon!
