Melichloro is a very hard cheese traditionally produced in Lemnos island. It is produced from pasteurised sheep and goat milk and drained only a particular time of the year, at the end of spring, when humidity is as lowest as possible to achieve maximum drainage. The dehydration process ends when it’s produced a very hard cheese ideal for grating. Grate it for pasta dishes and also is perfect for saganaki.
