Baked Giant Beans in tomato sauce

Cooking time: 50 min

1 cup (200gr): 200kcal

Ingredients

1lb giant white beans – find it in our Pulses & Grains Section

1 onion, peeled and cut in half

1/2 cup extra-virgin olive oil

2 cans chopped tomatoes

Coarse salt and freshly ground pepper to taste

Method

1)Soak beans overnight (approximately 12hours) in cold water. Make sure to cover them with enough water since they will double in size.

2)Place them in a large pot, cover them with water and bring the beans to a boil for 30-50 mins until soft.

3) Once boiled, strain them but do not drain them, just transfer them to a baking tray, add the chopped tomatoes, olive oil, salt and pepper and the chopped onion and bake uncovered for about 50 mins at 180 C.

Tips for cooking variations:

When transfer the basic ingredients to the baking tray there are more ingredients you could add such as:

Chopped sausage OR Chopped carrots OR Chopped celery
