Your go-to chocolate cake for Valentine’s Cake, containing our favourite milk chocolate Lacta!

Ingredients
For the base
140 gr butter
440 gr sugar
70 gr cocoa
250 gr boiling water
250 gr flour
1 1/2 tablespoons of baking soda
1 pinch salt
3 eggs
1 vanilla
260 ml sour cream or yoghurt
100 gr milk chocolate (Lacta) finely chopped
For the cream you will need
1 large cream cheese pack
4 sachets of instant vanilla cream
6 cups milk
500 g heavy cream
6 tablespoons icing sugar
For the ganache, you will need
400 gr. Lacta (or other milk chocolate of your choice)
150 gr evaporated milk
1 tablespoon(s) glucose or honey
Add the cocoa powder and boiling water to a bowl and whisk until the mixture thickens. Set aside to cool. Meanwhile, in a mixer’s bowl add the butter and sugar and beat with the paddle attachment, for at least 5 minutes, until fluffy.
As soon as the mixture is fluffy in the bowl, add the eggs and vanilla extract one by one (you want the sugar to be whipped well with the eggs).When they become a homogeneous mixture, add the cocoa-water mixture to the bowl and whip slowly until homogenised. Add the sour cream or yoghurt and stir.
Next, add the flour which must be already mixed with the baking soda and salt and mixed until combined. Pour final combined mixture into a buttered large baking pan (35×30 cm or a bit larger), chop the Lacta chocolate into small pieces and add them to the tray. Bake for 25-30 minutes until you see that the knife comes out dry.
For the 2 different creams, first combine very well the cream cheese and vanilla cream with milk. In a different bowl whip the heavy cream with the icing sugar.
Finally, for the ganache, melt the Lacta chocolate in a bain-marie and add the evaporated milk, stirring constantly until homogenized. As a final touch add the glucose or honey and stir again.
For the assembly, after the sponge cake has cooled, moisten it lightly with some milk diluted with a liqueur of your choice, spread the cream as a first coating, then the whipped cream and on top of it the ganache.
