After fermentation is completed, the wine is matured for at least 2.5 years in new French oak barrels in the Estate cellar and remains for the same amount of time in the bottle to develop the ideal balance. To preserve its flavour, the wine does not undergo stabilisation and filtering.
Ideally served with red meats in rich sauces, game and matured yellow cheeses.
*Careful transfer of the wine to a decanter before serving is recommended, to avoid sediments and allow the flavour profile to better express itself.

Mega Spileo means Large Cave, and it took its name from its location near Kalavryta in Peloponnese, where there is a large cave and a Monastery, the second oldest continuously occupied religious place in the world. The vineyard belonged to the Monastery, where the monks making wine since the 15th century until it was completely abandoned in the beginning of the 20th century when the current owners took over and revitalised this historic vineyard.
