Salado is a traditional cured meat of Corfu made using selected pork parts marinated in sea salt, pepper, garlic, local herbs and aromatic plants of Corfu. The patience towards the maturation time of meat products as well as the microclimate existing in several areas of Corfu all contribute to this meat selection’s essential maturation. For the final touch it is then being smoked extensively with oak wood and aromatic plants.
