The Estate Wild Ferment is produced from these well-ripened and concentrated grapes. Certain vines from all varieties are kept unharvested during the harvest of the Great Vineyard in late October, to allow the grapes to better ripen. The fermentation is happening in open barrels without additives.
The Wild Ferment multi varietal dry red wine, it is a limited edition wine, made of selection of Estate’s red varieties delicately intermingle against a backdrop of oak. This exceptional red dry wine is marked as PGI Achaia and has unique complexity and duration. The varietal composition of the Wild Ferment is: Mavrodaphne 41%, Cabernet Sauvignon 27%, Merlot 20%, Cabernet Franc 12%.
The fermentation is done in brand new, open-ended French oak barrels lasting for 3-4 weeks, and afterwards the wine remains in the same barrels for another 24 months to age. The wine matures in the bottle for at least another 2 years. To preserve its flavour, the wine does not undergo chilling and filtering.
Wild Ferment has deep red colour with vibrant violet hue. On the nose it has hints of green peppers, black fruit, bitter chocolate and leather, with mild notes of wood. On the palate is exuberant and warm, with intense tannins and acidity that makes it ideal for ageing and it has a strong aftertaste of laurel and dried fruits.
Ideally served with grilled meat, game, aged yellow cheese
*Careful transfer of the wine to a decanter before serving is recommended, to avoid sediments and allow the flavour profile to better express itself.

Mega Spileo means Large Cave, and it took its name from its location near Kalavryta in Peloponnese, where there is a large cave and a Monastery, the second oldest continuously occupied religious place in the world. The vineyard belonged to the Monastery, where the monks making wine since the 15th century until it was completely abandoned in the beginning of the 20th century when the current owners took over and revitalised this historic vineyard.
