To make this traditional traditional spetsofai – sausages & bell peppers meze recipe you will need:
2 traditional sausages (with leek) around 800gr or 3 traditional spicy sausages around 900gr (if you want it more spicy!)
4 various bell peppers in large pieces (green, red, orange)
1 large (or 2 medium) chopped white onion(s).
2 cloves of minced garlic.
2 cups grated or crushed tomato
1 tbsp tomato paste
1 teaspoon salt, black pepper, sweet red pepper.
½ teaspoon red chili flakes
2 teaspoon dry oregano
¼ cup Olive oil
2 tbsp chopped fresh parsley
Cooking instructions:
Wash and dry the peppers and sausages
In separate non-stick pans, sauté the peppers until they soften.
Sauté and brown the sausages on the other side.
We leave both aside.
Pour the olive oil into a wide pot (pan) and brown the onion and garlic
Add the tomato with the pulp, and the spices, and let it cook a little until it starts to sizzle (it plays a role in the extra deliciousness!)
Then we add about 2 to 3 cups of warm water
When it boils, alternately pour in the peppers and the sausages.
Let the mix boil, half-covered, until it the sauces reaches the desired thick consistency!
Sprinkle with fresh parsley and enjoy while warm!
